WELSH RABBIT

| 2 Tablespoons butter | |
| 1 cup milk | |
| 2 Tablespoons flour | |
| 6 ounces Velveeta or grated cheese | |
| ¼ teaspoon salt | |
| 5 slices bread | |
| dash pepper Bac-Os |
Melt butter in top of double boiler over boiling water.
Sprinkle in flour, salt, and pepper. Stir smooth and cook for about 2 minutes.
Add milk gradually, stirring to keep the sauce smooth. After all the milk is added, stir
until
the sauce thickens. (Takes about 4 minutes.)
Cut cheese into small cubes and add gradually to sauce, stirring until all cheese is
melted.
Toast bread. Cover each slice of toast with cheese sauce.
Sprinkle each serving with Bac-Os.
