JANIE'S SUGAR COOKIES with RAISIN FILLING
2 cups sugar
2 cups butter or shortening
6 eggs
6 tsp. baking powder
7 cups flour
4 tsp. vanilla
Cream together sugar and butter. Add eggs, vanilla, and dry ingredients.
Mix thoroughly.
This dough is wonder shaped for cookies. Can be rolled immediately or after refrigeration.
Roll with rolling pin. Bake 10 minutes on an oiled cookie sheet at 375 degrees.
(For the raisin cookies cut into 3" circles.)
RAISIN FILLING
1½ cups raisins
1 cup water
½ cup white sugar
3 Tbsp. Cornstarch
grated rind & juice of lemon
Chop raisins and mix with other ingredients; Cook until thick.
Before baking sugar cookies put a small amount of filling on one circle. Put another
circle on top
and seal around edges. Bake until lightly browned.
