JUDY VUNO'S CHEESY RICE

1 large onion, chopped and add 1/2 stick oleo or butter and cook until transparent.
Add 2 cups rice to mixture and sauté.
Then add 4 cups chicken broth and cook until rice is tender (approx. 20 minutes).
Take off stove and add 1/3 lb. grated white cheese, salt & pepper and some more chicken broth.
Sprinkle with parmesan cheese to serve.
