 | 2 minced garlic cloves |
 | 1 cup white vinegar |
 | 1/2 cup water |
 | 1 tblsp. salt |
 | 3-5 day old round bread |
 | 2 tblsp. mixed pickling spice |
 | 1 tsp pepper |
 | 3 lbs. fresh pork cut into 2 inch cubes |
- Marinate pork in brine - refrigerate at least 3 days,
- Remove spices and cook meat in brine until tender (30 minutes or less at a simmer),
- Drain, retaining the liquid,
- Slice bread, dip in liquid,
- Using fat trimmed from pork, fry bread until crisp on both sides (use a cast iron
skillet for best results)
