bullet2 minced garlic cloves
bullet1 cup white vinegar
bullet1/2 cup water
bullet1 tblsp. salt
bullet3-5 day old round bread
bullet2 tblsp. mixed pickling spice
bullet1 tsp pepper
bullet3 lbs. fresh pork cut into 2 inch cubes
  1. Marinate pork in brine - refrigerate at least 3 days,
  2. Remove spices and cook meat in brine until tender (30 minutes or less at a simmer),
  3. Drain, retaining the liquid,
  4. Slice bread, dip in liquid,
  5. Using fat trimmed from pork, fry bread until crisp on both sides (use a cast iron skillet for best results)
