Here is the recipe for mexican papaya salsa.  The papayas are probably only available thru spring and summer.  You might not even have them available there unless you have cuban or some other fruit markets available.  It won 2nd place (and $50) in the 1997 Desert Empire Fair!

Mexican Fruit Salsa

2 mexican papayas (peeled, seeded and chopped into ½" chunks)
½ c. cilantro (stems removed and chopped up)
4 jalapenos (chopped)
juice of 1 lemon
1 small red onion chopped fine
1 tspn garlic salt
1 tspn black pepper

Combine all ingredients together, sqeezing the lemon over the top last. Mix lightly. Serve with dense chips.  People are surprised to find they are eating papayas and not tomatoes.  You can adjust the amount of cilantro or peppers if you like more.   I’ve also added one or two real ripe peaches or nectarines chopped up and it tastes yummy.  DO NOT USE CANNED PEACHES  -  they don’t cut it!!
