CHERI'S CEVICHE
1 1/2 pounds fresh whitefish fillets (orange rouge or similar white fish)
1 cup fresh lime juice
1/2 cup olive oil
2 cloves garlic, crushed
1/2 tsp. thyme
1 tsp. ground cumin
1 green or red bell pepper, shopped
1 small sweet onion, chopped
2 tomatoes, diced
Tabasco
Cut fish into very thin, small slices. Marinate in the lime juice for 1
1/2 hours.
Mix together the olive oil, garlic, oregano, thyme, cumin, and Tabasco for the dressing.
After the fish has marinate, blend in. the bell pepper, onion, tomatoes, and dressing.
Stir gently to blend. Refrigerate 1 hour before serving.
